	{"id":72912,"date":"2020-11-29T04:56:12","date_gmt":"2020-11-28T17:56:12","guid":{"rendered":"https:\/\/timesnewsgroup.com.au\/ballarat\/?p=72912"},"modified":"2020-11-22T18:21:25","modified_gmt":"2020-11-22T07:21:25","slug":"we-bar-none","status":"publish","type":"post","link":"https:\/\/timesnewsgroup.com.au\/ballarat\/news\/we-bar-none\/","title":{"rendered":"Victoria\u2019s most sustainable snacks, bar none"},"content":{"rendered":"<p>THE products you purchase at the shops may be wrapped in compostable packaging, but as Ellen Burns learnt, leftover rubbish is often not home-compostable.<\/p>\n<p>She is the founder and sole trader behind We Bar None; an energy bar and cracker business manufacturing healthy snack foods in Ballarat, and the first Victorian enterprise to make home-compostable packaging part of products.<\/p>\n<p>Lots Aussie energy bar brands have launched in recent years, but Ms Burns said her original recipes, and carbon-neutral, zero-waste, sustainable model create a point of difference within the snack food industry which is \u201cone of the worst waste culprits.\u201d<\/p>\n<figure id=\"attachment_72914\" aria-describedby=\"caption-attachment-72914\" style=\"width: 200px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-72914\" src=\"https:\/\/timesnewsgroup.com.au\/ballarat\/wp-content\/uploads\/sites\/9\/2020\/11\/DSC_0015-200x300.jpg\" alt=\"\" width=\"200\" height=\"300\" \/><figcaption id=\"caption-attachment-72914\" class=\"wp-caption-text\">Ellen Burns\u2019 bar and cracker brand offers 10 different snacks, free of guilt and waste.<\/figcaption><\/figure>\n<p>\u201cI\u2019m the only energy bar in Australia with home-compostable packaging. That\u2019s huge. It\u2019s my first business which I\u2019ve built organically and it\u2019s self-funded,\u201d she said.<\/p>\n<p>\u201cWhen I first started, I was hand-wrapping each bar in baking paper and gluing a little label on them to stay away from plastic.<\/p>\n<p>\u201cNow, I\u2019ve got six bar flavours which are diabetic-friendly with no added sugar. I have four handmade cracker flavours which are made from just seeds; sesame, sunflower and flax seeds, and are low-carb and low FODMAP.\u201d<\/p>\n<p>The whole range is gluten-free, vegan and paleo. We Bar None uses vegetable and soy-based inks. Cracker boxes have an inner-sleeve which looks like cellophane, but is actually made from corn starch, just like packaging was before plastic.<\/p>\n<p>Ms Burns started experimenting with energy bar recipes in 2013 when she was living in Canada. She was inspired by the country\u2019s healthy convenience foods which were easily accessible and a contrast to the Australian market.<\/p>\n<figure id=\"attachment_72916\" aria-describedby=\"caption-attachment-72916\" style=\"width: 300px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-72916\" src=\"https:\/\/timesnewsgroup.com.au\/ballarat\/wp-content\/uploads\/sites\/9\/2020\/11\/DSC_0011-300x200.jpg\" alt=\"\" width=\"300\" height=\"200\" \/><figcaption id=\"caption-attachment-72916\" class=\"wp-caption-text\">Ms Burns\u2019 recipes have barely changed since she began experimenting with energy bars seven years ago, interested in nutrition and medicinal foods.<\/figcaption><\/figure>\n<p>Seven years later, her bars are manufactured at Springhill Farm in Delacombe and she cooks up the crackers herself in a home commercial kitchen in Brown Hill.<\/p>\n<p>\u201cSpringhill is a local, family business with a little factory that allows for the production of big volumes which I now need, and they have a proper machine to feed the roll of home-compostable packaging through,\u201d she said.<\/p>\n<p>During the pandemic period, the We Bar None online shop has been popular with people putting together care packages for family and friends in lockdown areas.<\/p>\n<p>The products are currently stocked at The Healthy Hub, Go Vita, the Workshop Caf\u00e9 and Hattie and the Wolf.
