\u201cI always try and push a few interesting styles or varieties of wines that people may not have heard of, but similarities can still be drawn from them to wine varieties people are comfortable with like sauvignon blanc, pinot gris, or Riesling.<\/p>\n
\u201cI\u2019m hoping I can expand people\u2019s knowledge of wine, and get them to try something new.\u201d<\/p>\n
The Wine Room has a focus on organically and naturally made wines by small producers, stocking brands from Australia, France, Italy, Spain and beyond.<\/p>\n
Boath is in charge of the food menu at Pencilmark, utilising local producers including Salt Kitchen Charcuterie, while stocking tinned seafood from Spanish Michelin star restaurant G\u00fceyu Mar.<\/p>\n
\u201cIt\u2019s a super casual and snacky spot, as opposed to a dining venue. It\u2019s kind of the opposite to Underbar,\u201d Mr Schuurs said.<\/p>\n
Local artist Travis Price has created unique, bright, bold artworks for the space that feature people who have been part of the Underbar and Pencilmark stories, and their families and friends.<\/p>\n
Mr Schuurs, his partner, their dog, and Boath, are just a few of the faces featured.<\/p>\n
\u201cWe\u2019re creating a fun and ever-changing space. The artwork will change every three-to-four months, and we want to commission other local artists,\u201d he said.<\/p>\n
\u201cOne week you could come in, and the next, it could look completely different.\u201d<\/p>\n
Mr Schuurs developed his passion for wine while working at Mitchell Harris, and has since gone on write the wine lists for restaurants Ragazzone, Moon and Mountain, Renard and Buninyong\u2019s The Shared Table.<\/p>\n
