But Ket is more than just a place to pick up world-class croissants. It\u2019s a bakery that belongs to its people.<\/p>\n<p>Every sourdough donut, pastry, focaccia and slice of bread that leaves the ovens at Ket carries a deeper story \u2014 one of local ingredients, real fermentation, and a commitment to doing things properly.<\/p>\n<p>From the organic, sustainably-milled flour to the herbs grown on-site and the butter churned down the road, Ket&#8217;s food is rooted in the Bellarine. This isn\u2019t token \u201csupport local\u201d lip service \u2014 it\u2019s how they operate, every day.<\/p>\n<p>\u201cEverything we bake is shaped by this place,\u201d says founder Miek Paulus. \u201cThe climate, the soil, the people who bring us their milk, their lemons, their figs, their eggs \u2014 it all comes through in the food.\u201d<\/p>\n<p>But Ket\u2019s connection to the community goes well beyond their ingredients list.
