	{"id":23306,"date":"2019-05-02T04:01:38","date_gmt":"2019-05-02T04:01:38","guid":{"rendered":"https:\/\/timesnewsgroup.com.au\/bellarinetimes\/?p=23306"},"modified":"2019-05-02T04:03:06","modified_gmt":"2019-05-02T04:03:06","slug":"sweet-passion-adds-to-little-italy-on-bell-street","status":"publish","type":"post","link":"https:\/\/timesnewsgroup.com.au\/bellarinetimes\/living\/sweet-passion-adds-to-little-italy-on-bell-street\/","title":{"rendered":"SWEET PASSION ADDS TO LITTLE ITALY ON BELL STREET"},"content":{"rendered":"<p><strong>Romanian chef Aimone Zanghirella\u2019s&nbsp;<\/strong><strong>sweet tooth and love for&nbsp;<\/strong><strong>experimenting with ingredients has&nbsp;<\/strong><strong>seen him score the leading pastry&nbsp;<\/strong><strong>role at Bell Street\u2019s latest addition,&nbsp;<\/strong><strong>Dolce Passione.<\/strong><\/p>\n<p>Owned by Sicilian Salvatore Formica, boss of neighbouring restaurant il Matto, there\u2019s no denying Torquay\u2019s popular shopping strip is housing a host of ardent Italian foodies.<\/p>\n<p>Salvatore launched his patisserie on Good Friday (April 19) and says the response has been positive, with many Torquay locals piling in to taste the assortment of cakes and treats.<\/p>\n<p>\u201cI always wanted to do it (open a patisserie). I used to be a pastry chef, a gelato maker. Nobody can approve if it\u2019s not how I like it,\u201d he says jokingly.<\/p>\n<p>\u201cThere was a lot of people (on opening night) \u2013 friends, family, new customers. Normally people come out for dinner and then they want a dessert.\u201d<\/p>\n<p>The concept is simple \u2013 eat an authentic Italian meal at Il Matto before wandering over to Dolce Passione to polish off an evening of fine dining.<\/p>\n<p>Il Matto, Italian for \u201cthe fool\u201d or \u201cthe joker\u201d, has been in operation for about two years. Despite its success and popularity among the community, Dolce Passione is a passion project for each of those involved, especially Aimone.<\/p>\n<p>\u201cI love what I do,\u201d he says without hesitation.<\/p>\n<p>\u201cI wake up and I want to go to work. When I wake up and this job doesn\u2019t give me what it\u2019s giving me now, I\u2019ll stop.\u201d<\/p>\n<p>The 30-year-old chef has worked in the food industry for nine years. He first travelled to Australia when he was 18 and says Aussies have an accurate perception of his country\u2019s worldfamous cuisine.<\/p>\n<p>\u201cI think Australians love their Italian food. I can see in this restaurant (il Matto), it\u2019s every time busy and in winter<br \/>\ntoo, they (Aussies) love food. They love to eat good food \u2013 it doesn\u2019t matter if it\u2019s from France or Italy, they love good food,\u201d Aimone says.<\/p>\n<p>Driven by fresh produce and traditional flavours, Aimone tries to combine new ideas with classic Italian recipes to ignite his creativity.<\/p>\n<p>\u201cI like to change every time. I like to do<br \/>\neverything fresh,\u201d he says.<\/p>\n<p>\u201cEvery day I wake up and say \u2018okay, today I would like to use raspberry\u2019, so I use everything with raspberry. I like<br \/>\nto use the products that are in season, and in Australia you have a lot because from everywhere, you have every season. From Queensland you can use pineapple\u2026 in Italy we don\u2019t have that.<\/p>\n<p>\u201cIn Australia, you can have four seasons in one day,\u201d he laughs.<\/p>\n<p>Aimone\u2019s knowledge of food has seen him work in restaurants around Europe, including Copenhagen and Switzerland before taking on a teaching role in his birthplace, Rome, at the renowned Italian Chef Academy.<\/p>\n<p>Inspired by his heritage and his experiences eating around the globe, Aimone says Italy is among the must-see destinations for food.<\/p>\n<p>\u201cI have to say that, my country is one of the best in the world for food,\u201d he says proudly.<\/p>\n<p>\u201cMy favourite dish to make is bab\u00e0 which is a speciality from Naples. It\u2019s a sponge cake, but we use inside dry yeast so it\u2019s a little bit less heavy. Inside we use syrup and vanilla as well as all the tastes from Italy like lemon and orange. At the end, we put a little bit of rum. That\u2019s my favourite dish.\u201d<\/p>\n<p>Patrons at Dolce Passione can find a host of authentic Italian cakes, biscuits, gelato, pastries and gelato made inhouse by Aimone and his team of two pastry chefs.<\/p>\n<p>The space is light-filled and features wooden tables, a bar-style seating area fitted with high chairs, three display cabinets (with a fourth for gluten-free options on the way) and a state-of-theart Tech-Bar coffee machine.<\/p>\n<p>Double glass doors lead to an outdoor seating area which is protected under large umbrellas, a prime spot to catch the afternoon sunlight while devouring one of Aimone\u2019s desserts.<\/p>\n<p>Dolce Passione, located at 4\/15 Bell Street Torquay, is open Monday to Thursday from 8.30am-4.30pm, Friday and Saturday from 8.30am-9.30pm and Sunday from 8.30am-4.30pm.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Romanian chef Aimone Zanghirella\u2019s&nbsp;sweet tooth and love for&nbsp;experimenting with ingredients has&nbsp;seen him score the leading pastry&nbsp;role at Bell Street\u2019s latest addition,&nbsp;Dolce Passione.
