	{"id":25669,"date":"2019-07-03T11:10:44","date_gmt":"2019-07-03T11:10:44","guid":{"rendered":"https:\/\/timesnewsgroup.com.au\/bellarinetimes\/?p=25669"},"modified":"2019-07-03T21:20:55","modified_gmt":"2019-07-03T21:20:55","slug":"lamb-meatballs-with-moghrabieh-yoghurt-beetroot","status":"publish","type":"post","link":"https:\/\/timesnewsgroup.com.au\/bellarinetimes\/living\/lamb-meatballs-with-moghrabieh-yoghurt-beetroot\/","title":{"rendered":"Lamb Meatballs with moghrabieh, yoghurt &amp; beetroot"},"content":{"rendered":"<p>INGREDIENTS (Serves 4)<\/p>\n<p>\u2022 500 grams lamb mince<br \/>\n\u2022 3 tablespoons feta cheese<br \/>\n\u2022 1 red onion (finely chopped)<br \/>\n\u2022 2 tablespoons chopped almonds<br \/>\n\u2022 \u00be tablespoon ground cumin<br \/>\n\u2022 \u00bc teaspoon dried chilli flakes<br \/>\n\u2022 2-3 tablespoons extra virgin olive oil<br \/>\n\u2022 2 cups moghrabieh<br \/>\n\u2022 4 cups chicken or vegetable stock<br \/>\n\u2022 1 teaspoon ground cumin<br \/>\n\u2022 1 clove garlic (crushed)<br \/>\n\u2022 2 cups rocket or baby spinach leaves<\/p>\n<p>To serve<br \/>\n\u00bc cup yoghurt Juice and zest of one lemon<br \/>\n1 small beetroot, peeled and grated<br \/>\n\u00bd cup chopped continental parsley<\/p>\n<p>METHOD<\/p>\n<p>Preheat oven to 180C. Combine the lamb mince, onion, almonds, cumin, chilli flakes in a medium sized bowl.<\/p>\n<p>Mix thoroughly for 5-8 minutes with your hands to really work the protein of the meat. Add the crumbled feta and mix through. Roll the mixture into meatballs the size of golf balls.<\/p>\n<p>Using a high-sided roasting tray or oven-proof pot, heat the extra virgin olive oil and cook the lamb meatballs briefly, turning quickly, just to brown the outsides.<\/p>\n<p>Add the moghrabieh ingredients to the pan and arrange the meatballs in the tray\/pot. Place in the oven and bake for 15-20 minutes, or until the stock is absorbed and the moghrabieh is tender. Halfway through cooking, give the pot a shake to ensure the ingredients cook evenly.<\/p>\n<p>Using the same bowl, grate the beetroot and set aside.<\/p>\n<p>Using the same bowl again, mix the yoghurt, juice and lemon zest.<\/p>\n<p>Remove meatballs and moghrabieh from the oven, stir through the rocket or spinach \u2013 the residual heat will wilt the greens.
