Photo: CHARLIE YOUNG<\/figcaption><\/figure>\n<p>&nbsp;<\/p>\n<p>This has involved him running independent multisite food and beverage operations for the bespoke QT Hotels brand and now for the ERDI Group, who manage the Novotel Hotels chain, amongst others.<\/p>\n<p>\u201cI\u2019ve always had my hand in food and beverages, and I suppose when we started to look towards TEMPO, it was about utilising what was going to be best for Geelong and its people.<\/p>\n<p>\u201cWe love Geelong and we&#8217;ve been a part of the local community with the Novotel for over 25 years.<\/p>\n<p>\u201cWe aren\u2019t any blow in so to say from Melbourne. We\u2019ve been here and are now evolving the venue to really be something special.<\/p>\n<p>\u201cBeing on the waterfront, it presented us with a great opportunity. Photo: SUPPLIED<\/figcaption><\/figure>\n<p>&nbsp;<\/p>\n<p>TEMPO celebrates the rich and local produce and flavours of Victoria and is a tribute to the culinary heritage of the region.<\/p>\n<p>Featuring a thoughtfully designed shared menu which boasts a seafood and grill focus, the restaurant sources directly from local farmers, fishermen and producers, ensuring each dish captures the authentic tastes of the region.<\/p>\n<p>To bring this culinary dream to life, TEMPO features an experienced cheffing team, led by worldly chef Erwin Joven.<\/p>\n<p>The Culinary Institute of America chef brings over twenty years of experience to TEMPO from the elite culinary sector.<\/p>\n<p>Mr Joven has spearheaded kitchens all over the world, including those in ultra luxury island resorts in the Caribbean, British Virgin Islands, St Vincent and Grenadines, Turks and Caicos Islands, Fiji and later in the Phillipines.<\/p>\n<figure id=\"attachment_118235\" aria-describedby=\"caption-attachment-118235\" style=\"width: 600px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-118235 \" src=\"https:\/\/static.timesnewsgroup.com.au\/prod\/uploads\/sites\/2\/2023\/10\/K7A9697_24678-1.jpg?_t=1696309421\" alt=\"\" width=\"600\" height=\"400\" \/><figcaption id=\"caption-attachment-118235\" class=\"wp-caption-text\">Portarlington mussels and other local seafood are key pillars in the TEMPO menu. Photo: SUPPLIED<\/figcaption><\/figure>\n<p>&nbsp;<\/p>\n<p>The American chef moved to Australia in 2018 and after working in Adelaide and the Hayman Islands, turned his focus to joining Mr Oakley in bringing TEMPO to life in Geelong.<\/p>\n<p>\u201cSteven made it very clear from the beginning what the concept was going to be at TEMPO and it&#8217;s been a pleasure to bring it to life.<\/p>\n<p>\u201cOur ethos is ultra-high quality but done very simply and authentically.<\/p>\n<p>\u201cIt\u2019s clean flavours, grill orientated and somewhat Italian inspired.<\/p>\n<p>\u201cThere\u2019s no fusion confusion. It\u2019s not finicky, it&#8217;s just about about letting the food showcase itself.<\/p>\n<p>\u201cThe seafood dishes have all been incredibly popular thus far.<\/p>\n<p>\u201cPortarlington mussels, local fish and everything in between is sourced as locally as we can get it.<\/p>\n<p>\u201cThe grilled prawn starter with sea urchin butter is absolutely amazing, as is the grilled seafood platter, salmon and the rockling.<\/p>\n<p>\u201cHe (Steven) gives us the words and the meanings of TEMPO, and we just try put it onto the plate.<\/p>\n<p>\u201cLuckily the feedback of it has been very positive and hopefully it continues to grow.\u201d<\/p>\n<figure id=\"attachment_118260\" aria-describedby=\"caption-attachment-118260\" style=\"width: 402px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-118260 \" src=\"https:\/\/static.timesnewsgroup.com.au\/prod\/uploads\/sites\/2\/2023\/10\/K7A9849-scaled.jpg?_t=1696309834\" alt=\"\" width=\"402\" height=\"550\" \/><figcaption id=\"caption-attachment-118260\" class=\"wp-caption-text\">Tempo is Italian for time and embraces the notion of nonna&#8217;s kitchen and sharing food together. Photo: SUPPLIED<\/figcaption><\/figure>\n<p>&nbsp;<\/p>\n<p>As part of their commitment to food and beverage excellence, TEMPO boasts a thoughtfully curated bar menu which suits the flavours of the kitchen.<\/p>\n<p>\u201cWe\u2019ve created plenty of special cocktails, however our Geelong Mai Thai seems to be really popular so far,\u201d Mr Oakley said.<\/p>\n<p>\u201cAlongside the signatures like an espresso martini and so on, the wines are moving along really nicely too, mainly the Victorian pinots.<\/p>\n<p>\u201cThe wine list only has two from about fifty which aren\u2019t from the region.<\/p>\n<p>\u201cWe\u2019ve also collaborated with local breweries like Bells Beach Brewing to champion our local producers.<\/p>\n<p>\u201cThere\u2019s definitely a great synergy between the food and drink offerings, with both being hyperlocal,\u201d Mr Joven added.<\/p>\n<p>\u201cThe wines and cocktails compliment the food really well.
