Sausage supremacy for Corio butcher

A SIMPLE yet effective approach to the creation of one of its prized sausages has won A Cut Above Family Butcher in Corio a top honour at this year’s regional meat industry awards.

A Cut Above Family Butcher owner and operator Daniel McCarthy said the team was thrilled that its spicy Italian pork sausage was judged Victoria’s Best Continental Sausage at the Australian Meat Industry Council Awards.

“We’re feeling good, we’ve won numerous awards before, but we’ve missed out on a number of years due to COVID-19 and then again last year because we didn’t enrol,” Mr McCarthy said.

“So it was nice to get back among the winners.”

Mr McCarthy said while the sausage is “spicy”, tasters should not be alarmed as the spiciness level is actually quite mild.

Described as a “basic” sausage, the winning entry includes A Cut Above Family Butcher’s secret seasoning.

A Cut Above Family Butcher also regards Mama Melisse’s homemade hot sauce, which won Australia’s best hot sauce earlier this year, as being a key ingredient in the recipe.

The business has received high praise from customers and the Corio community, with several businesses sharing the butcher’s success over social media.

“Everyone loves to come here and get on board where they can and beat our drum a little bit,” Mr McCarthy said.

“We get great support from our community. Most things we do, they’re received really well, and everyone gets behind it.”
