{"id":130408,"date":"2026-05-06T04:00:00","date_gmt":"2026-05-05T18:00:00","guid":{"rendered":"https:\/\/timesnewsgroup.com.au\/geelongtimes\/?p=130408"},"modified":"2026-04-30T11:38:34","modified_gmt":"2026-04-30T01:38:34","slug":"new-wine-bar-pours-into-pakington-streets-river-end","status":"publish","type":"post","link":"https:\/\/timesnewsgroup.com.au\/geelongtimes\/news\/new-wine-bar-pours-into-pakington-streets-river-end\/","title":{"rendered":"New wine bar pours into Pakington Street&#8217;s river end"},"content":{"rendered":"<p>A new wine shop and bar has opened at the river end of Pakington Street, with locals already filling seats most nights.<\/p>\n<p>Claret Wine, run by Newtown couple Conor McNie and Zara Wilkens, combines a retail store with a walk-in bar, split across two neighbouring spaces.<\/p>\n<p>The pair are no strangers to the busy shopping strip, having run a nearby Blackhearts &amp; Sparrows store until late last year.<\/p>\n<p>But with Claret Wine, they are adding to their expertise by dipping into the hospitality world for the first time.<\/p>\n<p>&#8220;We&#8217;ve always had this notion of [opening] a wine bar,&#8221; McNie said.<\/p>\n<p>&#8220;With all the things we&#8217;ve learned over the years about wine, as well as going out to many hospitality places, we thought we could add some nice little touches that would really sit well with people.&#8221;<\/p>\n<p>Keeping the two sides of the business separate was deliberate. Wilkens said combining retail and bar service in a single space can dilute both.<\/p>\n<p>&#8220;It was really important to both of us that the retail and hospitality side of the business, whilst under the one umbrella, did remain separate,&#8221; Wilkens said.<\/p>\n<p>&#8220;We just didn&#8217;t want to have a nice shop where you&#8217;d have to climb over people to actually do your shopping. Photo: Paddy Sinnott.<\/figcaption><\/figure>\n<p>&nbsp;<\/p>\n<p>Both grew up in the area and said opening on Pakington Street felt like a return to where they started.<\/p>\n<p>&#8220;Both Connor and my first ever jobs were on Pakington Street, so it almost feels like we&#8217;re right back where we began and it&#8217;s almost like home was calling,&#8221; Wilkens said.<\/p>\n<p>The river end of the strip has seen a lift in activity in recent months, with several new venues opening.<\/p>\n<p>&#8220;Whilst Pakington Street is very established, it is going through a little bit of a change and a little bit of a boom,&#8221; Wilkens said.<\/p>\n<p>&#8220;To be able to be part of that and bring some new and exciting prospects and experiences for people was really fun for us.&#8221;<\/p>\n<p>&nbsp;<\/p>\n<figure id=\"attachment_30038\" aria-describedby=\"caption-attachment-30038\" style=\"width: 617px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-30038 \" src=\"https:\/\/static.timesnewsgroup.com.au\/prod\/uploads\/sites\/21\/2026\/05\/IMG_8266_36782.jpeg\" alt=\"\" width=\"617\" height=\"411\" \/><figcaption id=\"caption-attachment-30038\" class=\"wp-caption-text\">Claret Wine owners Zara Wilkens and Conor McNie at their new shop and bar on Pakington Street. Photo: Paddy Sinnott.<\/figcaption><\/figure>\n<p>&nbsp;<\/p>\n<p>McNie said the response since launching the bar had been steady, with strong early patronage and a mix of customers moving between the bar and shop.<\/p>\n<p>&#8220;It&#8217;s just great to see so many different types of people enjoying the things we&#8217;ve put together, and seeing that that diverse offering can really impact so many people,&#8221; McNie said.<\/p>\n<p>&#8220;We want to be that exciting meeting place, [whether] it&#8217;s the beginning of a night or it can be the end cap of a night.
