{"id":74406,"date":"2021-03-13T05:00:31","date_gmt":"2021-03-12T18:00:31","guid":{"rendered":"https:\/\/timesnewsgroup.com.au\/goldenplains\/?p=74406"},"modified":"2021-03-11T21:40:37","modified_gmt":"2021-03-11T10:40:37","slug":"bibo","status":"publish","type":"post","link":"https:\/\/timesnewsgroup.com.au\/goldenplains\/news\/bibo\/","title":{"rendered":"History in future &#8211; Eat Drink West"},"content":{"rendered":"<p><strong>Can\u2019t go past the good-old classics<\/strong><\/p>\n<p>IT\u2019S been twenty-four years since Charlie Graham first launched Bibo caf\u00e9 and restaurant on Sturt Street.<\/p>\n<p>Although he\u2019s moved the business from the 200s block to the grand home-style two-story building that is 614 Sturt Street, Mr Graham has kept Bibo\u2019s signature retro vibe, the same Grinders Coffee \u201cwith a kick,\u201d homemade cakes, and loyal long-term clientele.<\/p>\n<figure id=\"attachment_74409\" aria-describedby=\"caption-attachment-74409\" style=\"width: 300px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-74409\" src=\"https:\/\/timesnewsgroup.com.au\/goldenplains\/wp-content\/uploads\/sites\/23\/2021\/03\/IMG_4626-300x200.jpg\" alt=\"\" width=\"300\" height=\"200\" \/><figcaption id=\"caption-attachment-74409\" class=\"wp-caption-text\">A snap of Charlie Graham greets customers at the door.<\/figcaption><\/figure>\n<p>\u201cI couldn\u2019t recreate the whole retro scene of the old space, but there is old retro furniture and snippets in here of the past, so I\u2019ve recreated the soul and personality,\u201d he said.<\/p>\n<p>\u201cI\u2019m still feeding the same crowd that were here as teenagers, they\u2019re now just 20 years older.\u201d<\/p>\n<p>The Bibo team describe their regular customers as \u201cfriendly and interesting,\u201d coming from a wide spectrum of backgrounds.<\/p>\n<p>\u201cThey enjoy the living experience and the indoor-outdoor dining, now with the casual, relaxed front deck,\u201d Mr Graham said.<\/p>\n<p>Bibo is \u201calways open,\u201d and popular items on the menu have never changed since the 90s, like their Dog\u2019s Breakfast; eggs any way, overnight tomatoes, mushrooms and crispy bacon.<\/p>\n<figure id=\"attachment_74408\" aria-describedby=\"caption-attachment-74408\" style=\"width: 300px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-74408\" src=\"https:\/\/timesnewsgroup.com.au\/goldenplains\/wp-content\/uploads\/sites\/23\/2021\/03\/IMG_4624-300x200.jpg\" alt=\"\" width=\"300\" height=\"200\" \/><figcaption id=\"caption-attachment-74408\" class=\"wp-caption-text\">Classic, fresh crowd-pleasers are Bibo\u2019s specialty.<\/figcaption><\/figure>\n<p>\u201cThis was named after my dog, Daisy, who was also on the front of the menu. The same old classics are always shining though.<\/p>\n<p>\u201cPeople love that it\u2019s got a quirky name, and I\u2019m the only one in town that I know of doing overnight tomatoes,\u201d he said.<\/p>\n<p>\u201cIf it ain\u2019t broken, don\u2019t fix it.\u201d<\/p>\n<p>With the influence of passionate chef Ben O\u2019Brien in the kitchen, the Bibo menu doesn\u2019t just have the well-loved blasts from the past, but plenty of freshness, with a \u201cgood balance of flavour and texture.\u201d<\/p>\n<p>\u201cBen is a New Zealander, and is one of the top chefs I\u2019ve ever had in 30 years, so he is fantastic to have here.\u201d<\/p>\n<p>In the era of increased counter-paying, the venue values the opportunity to offer table service, with a mellow, casual, homely feel.<\/p>\n<p>\u201cFor what they\u2019re paying, people deserve more than going up to the counter to order and pay,\u201d Mr Graham said.<\/p>\n<figure id=\"attachment_74410\" aria-describedby=\"caption-attachment-74410\" style=\"width: 200px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-74410\" src=\"https:\/\/timesnewsgroup.com.au\/goldenplains\/wp-content\/uploads\/sites\/23\/2021\/03\/IMG_4631-200x300.jpg\" alt=\"\" width=\"200\" height=\"300\" \/><figcaption id=\"caption-attachment-74410\" class=\"wp-caption-text\">Bibo will soon have two outdoor dining areas.<\/figcaption><\/figure>\n<p>\u201cAll my six staff serving here are all multi-skilled, including Karen, who worked with me from the late 90s to the 2000s, and has come full circle, back to work with me.\u201d<\/p>\n<p>Mr Graham\u2019s plans for 2021, mindful of social distancing and utilising his space to its best potential, is to set up another outdoor dining area in the restaurant\u2019s back courtyard.<\/p>\n<p>Customers, alongside their pets, are always welcome guests.<\/p>\n<p>\u201cI have a dog, we\u2019re dog friendly, and people feel comfortable to bring them here.
