I was always curious, so in 2015 I threw in my job and we started to make it happen.\u201d<\/p>\n<p>Since then the Masterson\u2019s have turned their curiosity into a thriving and award-winning business.<\/p>\n<p>\u201cGrowing garlic was one of our passions,\u201d Ms Masterson said. \u201cBut we have expanded to make a whole range of other products.<\/p>\n<p>\u201cIn 2017 life came full circle and for a brief period we started supplying <em>Master Chef<\/em> with black garlic.\u201d<\/p>\n<p>Springmount Fine Foods grow their garlic on their farm, located just east of Creswick where the black soil is rich and fertile.<\/p>\n<p>April is planting season for Mr and Mrs Masterson, and the fresh garlic will be ready for harvest in December.<\/p>\n<p>Then the magic happens. To create black garlic, the bulbs are placed in a temperature and humidity-controlled oven for 40 days.<\/p>\n<p>\u201cIt\u2019s the natural sugars in the garlic that turn it sweet and sticky,\u201d Ms Masterson said.<\/p>\n<p>\u201cThe garlic is caramelised. It is both sweet and savoury. You have to taste it to get. It\u2019s a really complex flavour, a mild umami taste.\u201d<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-75576\" src=\"https:\/\/timesnewsgroup.com.au\/goldenplains\/wp-content\/uploads\/sites\/23\/2021\/05\/8Z1A8510-300x200.jpg\" alt=\"\" width=\"300\" height=\"200\" \/>The end result can be paired with seafood and a range of meats, mushrooms, and accompany cheese platters.<\/p>\n<p>\u201cBlack garlic has become a key ingredient in some of Melbourne\u2019s top restaurants as well as venues in Daylesford and Central Victoria,\u201d Ms Masterson said.<\/p>\n<p>Yet it\u2019s not just Springmount Fine Foods\u2019 famous black garlic making waves as the Masterson\u2019s have also won medals for their sauces, vinaigrettes, and fruit paste.<\/p>\n<p>\u201cWe have won a total of 21 medals on our products, we have achieved a lot in the five to six years of operation,\u201d Mrs Masterson said.<\/p>\n<p>Springmount Fine Foods supplies boutique grocers in Ballart and several cellar doors in Victoria.
