HATTED Cabarita Beach restaurant Paper Daisy has appointed chef Baxter Newstead as its new head chef, marking a new chapter for the beachfront venue.

Newstead brings more than 18 years’ experience across leading Australian and international kitchens, including Michelin-starred Ekstedt in Stockholm, where he worked closely with Swedish chef Niklas Ekstedt in senior roles across venues in Europe.

His Australian experience includes stints at Vue de Monde, Wildflower, Saffire Freycinet and Noma Australia.

The restaurant at Halcyon House in Cabarita Beach is known for its produce-driven menus and relaxed coastal setting.

Halcyon House general manager Magnus Hojden said Newstead’s approach aligned naturally with the restaurant’s direction.

“Baxter brings a depth of experience cooking food at the highest level, while still creating an experience that feels relaxed and genuine,” he said.

Newstead said the restaurant’s ethos and the region itself were key drawcards.

“Paper Daisy has an ease that really resonates with me,” he said.

“After years working internationally, I was drawn to the opportunity to cook in a way that feels grounded and intuitive,” he said.

“The produce in this region is extraordinary, and I’m excited to let the landscape and seasons guide the food.”
