	{"id":93977,"date":"2023-11-25T04:46:52","date_gmt":"2023-11-24T17:46:52","guid":{"rendered":"https:\/\/timesnewsgroup.com.au\/mcivortimes\/?p=93977"},"modified":"2024-01-02T19:01:42","modified_gmt":"2024-01-02T08:01:42","slug":"saving-heathcotes-oldest-building","status":"publish","type":"post","link":"https:\/\/timesnewsgroup.com.au\/mcivortimes\/news\/saving-heathcotes-oldest-building\/","title":{"rendered":"Saving Heathcote\u2019s oldest building"},"content":{"rendered":"<p>HEATHCOTE\u2019S oldest building has been fully-restored and is now home to critically-acclaimed restaurant Chauncy.<\/p>\n<p>But when Jasper Hill Winery proprietors Ron and Elva Laughton purchased the run-down former survey office at 178 High Street in 2007, they were faced with the daunting task of bringing it back to life.<\/p>\n<p>The 14-year project journey started with a trip to the newsagent and a conversation with Barbara Walker Donnelly who was launching her real estate career at the time.<\/p>\n<p>\u201cI went to buy the paper to read over Christmas,\u201d Mr Laughton said. \u201cBut within five minutes of talking to Barb I was on the property.<\/p>\n<p>\u201cThe hidden Georgian architecture and local stone enthralled me and right then I had this grand idea of restoring the building and turning it into a destination restaurant.<\/p>\n<p>\u201cMy wife thought it was a bloody stupid idea, but then she went along with me.\u201d<\/p>\n<p>Ms Laughton reflected on the speed of the decision.<\/p>\n<p>\u201cWe bought it incredibly fast,\u201d she said. \u201cI&#8217;ve often said it was a bit like John Lennon and his lost weekend when he went off without Yoko.<\/p>\n<p>\u201cRon went off to buy the paper and came back with a house.\u201d<\/p>\n<p>Ms Walker-Donnelly said it was an ongoing joke between them.<\/p>\n<p>\u201cEven the day Chauncy opened, Ron gave a speech and pointed at me saying, \u2018It\u2019s her fault\u2019,\u201d she said.<\/p>\n<p>For the Laughtons the restoration has been all about making a lasting contribution to the district.<\/p>\n<p>\u201cHeathcote has been so good to me and my wife,\u201d Mr Laughton said. \u201cWe\u2019ve been here for over 40 years and I wanted to give back to Heathcote by giving back the oldest existing building.\u201d<\/p>\n<p>Ms Laughton said she was particularly proud of three things they had done in the region.<\/p>\n<p>\u201cIt feels a bit pompous to say this,\u201d she said, \u201cbut we kickstarted and helped promote the Heathcote wine industry.<\/p>\n<p>\u201cWe brought in Chapoutier, the French wine company, and then the third is obviously Chauncy.<\/p>\n<p>\u201cThere&#8217;s a charm to Heathcote and having Chauncy as a destination restaurant will only enhance it,\u201d Ms Laughton said.<\/p>\n<p>When it opened in 2021, it was the culmination of years of dedicated work bound by stringent heritage constraints.<\/p>\n<p>Although the structure had been overlooked in the City of Greater Bendigo\u2019s McIvor and Strathfieldsaye study in 2009, it was placed on the Victorian Heritage Register in 2010.<\/p>\n<p>\u201cI was very happy it was listed though,\u201d Mr Laughton said. \u201cIt\u2019s a very important building.\u201d<\/p>\n<p>At this point it comprised a sandstone core built in 1853\/54 with a crumbling late 19th century weatherboard addition.<\/p>\n<p>The sandstone section was one of ten survey offices built by the fledgling Colony of Victoria in the early 1850s, and is one of five that remain standing today.<\/p>\n<p>It was initially home to Philip Chauncy who was district surveyor for Heathcote until 1861.<\/p>\n<p>In 1872 Frederick John Spinks, a partner in Christie, Moore and Spinks store and mill, purchased the building as a residence and called it Helenslee in honour of his wife.<\/p>\n<p>The family sold it to Dr Esler in 1896 and he renamed it Rathlin.<\/p>\n<p>He was the first of a succession of doctors who lived and worked there, the last being Doctor Speed who retired in 1968.<\/p>\n<figure id=\"attachment_93980\" aria-describedby=\"caption-attachment-93980\" style=\"width: 485px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" class=\" wp-image-93980\" src=\"https:\/\/static.timesnewsgroup.com.au\/prod\/uploads\/sites\/25\/2024\/01\/web-helenslee-204x300.jpg\" alt=\"\" width=\"485\" height=\"713\" srcset=\"https:\/\/static.timesnewsgroup.com.au\/prod\/uploads\/sites\/25\/2024\/01\/web-helenslee-204x300.jpg 204w, https:\/\/static.timesnewsgroup.com.au\/prod\/uploads\/sites\/25\/2024\/01\/web-helenslee.jpg 681w\" sizes=\"auto, (max-width: 485px) 100vw, 485px\" \/><figcaption id=\"caption-attachment-93980\" class=\"wp-caption-text\">The now-demolished weatherboard tower contained a dentist\u2019s chair for many years.
