he studied agricultural science at Melbourne Uni,&#8221; Rainer Spoljaric said.<\/p>\n<p>After inheriting the first hive, the idea of Botanical Brew was quickly born.<\/p>\n<p>&#8220;Botanical Brew, we started out in Lara, and the idea behind that was producing naturally fermenting kombucha, made by fermenting honey and green tea.&#8221;<\/p>\n<p>After a successful launch, Botanical Brew was thrown into disarray when COVID-19 hit, but in order to evolve with the times, Rainer said the family decided to combine their skill sets and open a ferment-focused caf\u00e9 championing locally sourced produce.<\/p>\n<figure id=\"attachment_82783\" aria-describedby=\"caption-attachment-82783\" style=\"width: 600px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-82783 size-thumbnail\" src=\"https:\/\/static.timesnewsgroup.com.au\/prod\/uploads\/sites\/2\/2022\/10\/weirdly-sized-image-29-2-600x380.png?_t=1666052522\" alt=\"\" width=\"600\" height=\"380\" srcset=\"https:\/\/static.timesnewsgroup.com.au\/prod\/uploads\/sites\/2\/2022\/10\/weirdly-sized-image-29-2.png 600w, https:\/\/static.timesnewsgroup.com.au\/prod\/uploads\/sites\/2\/2022\/10\/weirdly-sized-image-29-2-300x190.png 300w\" sizes=\"auto, (max-width: 600px) 100vw, 600px\" \/><figcaption id=\"caption-attachment-82783\" class=\"wp-caption-text\">Photo: BOTANICAL BREW<\/figcaption><\/figure>\n<p>&nbsp;<\/p>\n<p>So just over a year ago they opened the doors to FUNK by Botanical Brew, a speciality coffee and bakery in Geelong West.<\/p>\n<p>&#8220;It&#8217;s us coming back to our roots in creating a caf\u00e9 bakery setting here with a beautiful garden and green space,&#8221; Photo: BOTANICAL BREW<\/figcaption><\/figure>\n<p>&nbsp;<\/p>\n<p>&#8220;We&#8217;re trying to support other local quality speciality producers.&#8221;<\/p>\n<p>Looking forward, the family is turning their attention back to fermentations.<\/p>\n<p>&#8220;We&#8217;re hoping to have the fermented vegetables back on the shelf as part of the core offering.<\/p>\n<p>&#8220;The idea is just to have clean, locally-sourced, health-conscious food items that we&#8217;re going to be producing for people,&#8221; Spoljaric said.<\/p>\n<p>But to Botanical Brew, the space will always be equally about community.<\/p>\n<p>&#8220;The highlight has just been the response from the community.
