	{"id":112364,"date":"2025-12-19T04:00:55","date_gmt":"2025-12-18T17:00:55","guid":{"rendered":"https:\/\/timesnewsgroup.com.au\/tweedcoasttimes\/?p=112364"},"modified":"2025-12-17T16:24:33","modified_gmt":"2025-12-17T05:24:33","slug":"first-look-inside-byron-bays-hottest-new-dining-destination-the-belongil","status":"publish","type":"post","link":"https:\/\/timesnewsgroup.com.au\/tweedcoasttimes\/news\/first-look-inside-byron-bays-hottest-new-dining-destination-the-belongil\/","title":{"rendered":"First look: Inside Byron Bay\u2019s hottest new dining destination, The Belongil"},"content":{"rendered":"<p>BYRON Bay\u2019s hottest new dining venue, <a href=\"https:\/\/belongilgroup.com\/\">The Belongil,<\/a> has opened just in time for the summer holidays \u2013 and acclaimed chef Shannon Bennett couldn\u2019t be more excited to see his long-held vision become a reality.<\/p>\n<p>Bennett, who lives 150 metres from the venue on the former site of Belongil Italian, has <a href=\"https:\/\/timesnewsgroup.com.au\/byroncoasttimes\/news\/celebrity-chef-reinvigorates-byron-bay-with-10-million-multi-venue-culinary-precinct\/\">partnered with his neighbour, businessman and property investor Glen Norman \u2013 the son of late Harvey Norman co-founder Ian Norman \u2013 to deliver the $10 million project.<\/a><\/p>\n<p>\u201cWe wanted to create something that\u2019s world class and the investment has been very heavy,\u201d Bennett said. \u201cThere\u2019s been no shortcuts.\u201d<\/p>\n<p>The development houses four venues, including <a href=\"https:\/\/belongilgroup.com\/venues\/feu\">fine dining restaurant <em>Feu<\/em>,<\/a> the more relaxed <a href=\"https:\/\/belongilgroup.com\/venues\/bistro\"><em>Belongil Bistro<\/em>,<\/a> and the prohibition-style bar <a href=\"https:\/\/belongilgroup.com\/venues\/blind-tiger\"><em>Blind Tiger<\/em>,<\/a> which will operate on an invitation-only basis for loyal customers. There will also be a streetside outlet called <a href=\"https:\/\/belongilgroup.com\/venues\/kiosk\"><em>Kiosk<\/em> <\/a>serving toasted sandwiches, egg and bacon rolls and homemade pastries.<\/p>\n<figure id=\"attachment_120178\" aria-describedby=\"caption-attachment-120178\" style=\"width: 600px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-120178\" src=\"https:\/\/static.timesnewsgroup.com.au\/prod\/uploads\/sites\/29\/2025\/12\/The-Belongil-has-opened-in-Byron-Bay.-Photo-DAVID-COPE-1024x682.jpeg\" alt=\"\" width=\"600\" height=\"400\" \/><figcaption id=\"caption-attachment-120178\" class=\"wp-caption-text\">Fine dining restaurant Feu at The Belongil. Photo: DAVID COPE<\/figcaption><\/figure>\n<p>&nbsp;<\/p>\n<p>\u201cI go for a walk with my two dogs on the beach every day and have made friends with so many other dog walkers and there was nowhere to get decent coffee so getting the Kiosk right was a priority,\u201d Bennett said. \u201cWe want to serve everyone from a 12-year-old who\u2019s saved up to buy a donut to people coming in for their anniversary dinner.\u201d<\/p>\n<p>The venue was constructed in just 14 weeks by Cobilt, a company Bennett described as the best builders he has ever worked with.<\/p>\n<p>The fitout was also led by Lee Brennan, who also designed Bangalow homewares store Island Luxe. \u201cYou walk in and you know you\u2019re in the Byron region,\u201d Bennett said. \u201cIt\u2019s very unique.\u201d<\/p>\n<p>The design includes reclaimed timber from a 350-year-old temple in Japan, carefully transported and incorporated into the build.<\/p>\n<figure id=\"attachment_120179\" aria-describedby=\"caption-attachment-120179\" style=\"width: 600px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-120179\" src=\"https:\/\/static.timesnewsgroup.com.au\/prod\/uploads\/sites\/29\/2025\/12\/The-exterior-of-The-Belongil-in-Byron-Bay.-Photo-DAVID-COPE-1024x682.jpeg\" alt=\"\" width=\"600\" height=\"400\" \/><figcaption id=\"caption-attachment-120179\" class=\"wp-caption-text\">The exterior of The Belongil in Byron Bay. Photo: DAVID COPE<\/figcaption><\/figure>\n<p>&nbsp;<\/p>\n<p>Bennett and executive chef Cory Campbell \u2013 formerly of Noma in Copenhagen and a longtime collaborator with Bennett at Vue de monde in Melbourne \u2013 have a strong focus on local produce. Suppliers include Boon Luck Farm, Conscious Ground Organics, Northern Rivers Poultry, Norco, Bread Social and Sunday Sustainable Bakery. Seafood is sourced from Josh Lewis of New Moon Fishing and Daniel Fleming of Fleming Fish Co.<\/p>\n<p>\u201cHe gets spanner crabs from right out the front,\u201d Bennett said.<\/p>\n<div class=\"mceTemp\"><\/div>\n<p>Menu highlights include potato rosti with tuna tartare and Kaluga caviar, truffle risotto and triple chocolate souffl\u00e9.<\/p>\n<p>Bennett has assembled a team of nearly 100 staff, blending experienced hospitality professionals with local newcomers.<\/p>\n<figure id=\"attachment_120180\" aria-describedby=\"caption-attachment-120180\" style=\"width: 600px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-120180\" src=\"https:\/\/static.timesnewsgroup.com.au\/prod\/uploads\/sites\/29\/2025\/12\/Belongil-Bistro-has-opened.-Photo-ANGELA-SAURINE-768x1024.jpeg\" alt=\"\" width=\"600\" height=\"800\" \/><figcaption id=\"caption-attachment-120180\" class=\"wp-caption-text\">Belongil Bistro. Photo: ANGELA SAURINE<\/figcaption><\/figure>\n<p>&nbsp;<\/p>\n<p>\u201cWe have bought half our team from outside Byron and the other half are youngsters who we are training,\u201d he said. \u201cWe want to upskill the community here in hospitality.\u201d<\/p>\n<p>While the venue is booked out for its first two weeks, Bennett said locals would always be accommodated where possible. \u201cWe encourage bookings so we can plan ahead but if you turn up without a booking, we\u2019ll never turn you away,\u201d he said.<\/p>\n<p>The site can seat up to 140 diners and includes 22 car spaces. Photo: DAVID COPE<\/figcaption><\/figure>\n<p>&nbsp;<\/p>\n<p>To people in the community who oppose developments like Justin Hemmes\u2019 planned venue on the former site of Cheeky Monkeys, which will feature his Sydney brands Totti&#8217;s and Jimmy&#8217;s Falafel, his message is to \u2018get a reality check\u2019.<\/p>\n<p>\u201cHaving Justin here will be fantastic for the community and for youngsters who are going to get world class training,\u201d he said. \u201cMy kids have grown up here and gone to school here \u2013 now one is at university in the UK and one at university in Western Australia. I want my kids to have world class training and have something to come back to here.
