Le Peche Gourmand.

Le Peche Gourmand, Creswick

Le Peche Gourmand use traditional methods and classic recipes, one that involves “reusing” the dough. This means they mix a new dough every day and then add some from the previous day.

This allows them to use less yeast as it feeds from itself. This brings a dense level of flavour and is called “pain au levain”.
