SINCE opening in November 2024, Zambrero Torquay has seen extraordinary success thanks to the incredible support of the Surf Coast community, enabling 22,541 meals to be donated to those in need.
In line with International Women’s Day, Zambrero celebrates owner Jessica Thomas, a dynamic entrepreneur making waves in the local business scene.
Jessica embodies the spirit of female empowerment, juggling multiple ventures while championing opportunities for young women.
This is a vision she shares with her business partner, Daryl McCormack, who is also incredibly proud to have 25 female team members at Zambrero.
Jessica’s journey is one of passion, dedication and a relentless pursuit of growth.
Growing up in Torquay, she has a deep connection to the community and a strong understanding of its unique character.
Even before opening Zambrero, she expressed her excitement about bringing the popular fresh food option to Torquay, recognising the area’s vibrant community and the potential for creating local jobs.
That vision has now become a reality, with Zambrero Torquay employing 33 local residents, an impressive 25 of whom are women.
“We’re thrilled to be part of the Torquay community, and to have the capability to build beautiful community relationships and partnerships, with a focus on giving back to those in need,” Jessica said.
“We believe in giving back and are committed to supporting local initiatives and enabling meaningful partnerships within the Surf Coast.”

“There’s a big demand in Torquay for quick yet fresh food options,” Jessica said.
But Zambrero is more than just a restaurant; it’s a vehicle for positive change.
Jessica is particularly passionate about the brand’s Plate4Plate initiative.
With each (regular/big) burrito, bowl or kids Zam-box purchased, Zambrero donates a meal to someone in need.
This inspiring program has already provided more than 88 million meals globally.
The Torquay store has contributed an astounding 22,541 meals since it opened.
Beyond serving up delicious and ethically-sourced food, Jessica also owns a successful project management consultancy specialising in mergers, acquisitions, divestments and digital transformation.
This demonstrates her keen understanding of the complexities of the modern business world.
And as if that is not enough, Jessica is also on the verge of launching an exciting e-commerce brand dedicated to supporting mental health initiatives.
The coming venture reflects her commitment to social impact and her desire to leverage innovation and technology for good.

Jessica’s passion for empowering young women is a driving force behind her diverse endeavours.
She believes in fostering an environment where young women can thrive, both personally and professionally.
“Education and mentorship are key,” Jessica said.
“I want to inspire young women to pursue their dreams – and dream bigger – whether it’s in hospitality, business, technology, or any other field they’re passionate about.”
The Zambrero Torquay team reflects this commitment, providing local young people – and particularly young women – with valuable employment opportunities.
Jessica’s commitment to lifelong learning is evident in her current studies for a doctorate in business innovation and AI.
Much like Zambrero, Jessica recognises the transformative power of business ventures.
And she is eager to explore its potential to drive positive change.
Jessica’s current academic pursuit is also fuelling her ambition and motivation to launch her first tech startup.
That is expected to take place sometime in the coming year and will further demonstrate her forward-thinking approach and entrepreneurial spirit.
