Maple Bakery hits its stride under new owner

TORQUAY’S Maple Bakery is settling into its next chapter, with new offerings, a refined space and a strong focus on locals shaping its direction under owner Nick Edgar.
Edgar took over Maple Bakery last year, bringing with him experience running two successful cafes and a clear vision centred on quality, consistency and customer experience.
The bakery has since found its rhythm, with a settled team and systems in place behind the scenes.
The new Maple experience starts with coffee. The bakery’s specialty offering has been firmly established, alongside a menu that continues to evolve.
“I want this place to have a reputation as the best coffee, the best food with quality service and an atmosphere to boot,” Edgar said.

“It can’t just be another cafe, it can’t just be another bakery, it’s not acceptable, it’s not enough.
“You have to have staff that are happy, you’ve got to have product that they’re proud of and customers will see that.”
A broader range of wraps has also been introduced, offering lighter options alongside the bakery’s traditional favourites, while a $16 tradie deal is helping cater to the area’s working community.
“We’re really embracing the locals and the tradies that work within the area and following their lead in what they want and ensuring that it’s good, delicious food with amazing coffee,” Edgar said.
The bakery’s signature pastry selection remains a major drawcard, with more than 30 options available each day, including croissants, cronuts, muffins, scrolls and doughnuts.

Outside, the front seating area has been transformed and is now framed by bold yellow and white awnings.
Edgar said the space had been designed as a “destination”, a more inviting place to sit and stay.
As Easter arrives, the focus is on continuing to build on the bakery’s growing reputation.
“We’re off and running now,” Edgar said. “We’re looking forward to an amazing Easter and a great 2026.”
